Juicy Beef Brisket

4th of July - Dinner for 2 in the house.
 
I am a Seafood-Lover and not really a big fan of meat, but I couldn't say no to this Juicy Beef Brisket that my husband made! It was just incredible and the meat was really tender and flavorful!




 INGREDIENTS
    14 ounces beef brisket
    salt to taste
    1/4 teaspoon freshly ground black pepper
    1/4 teaspoon garlic powder
    3 tablespoons and 1-3/4 teaspoons barbecue sauce
    3 tablespoons and 1-3/4 teaspoons water 


DIRECTIONS
    Preheat oven to 325 degrees F (160 degrees).
    Sprinkle both sides of brisket with salt, pepper and garlic powder. Place in a large covered roasting pan.
    Cook covered with no water at 325 degrees F (160 degrees C) allowing 1 hour per pound.
    Before last hour of cooking, remove brisket and slice. Return slices to pan and add barbecue sauce mixed with water. Cover meat with sauce, cover, and cook 1 hour longer.

Tasty & Sweet Corn on the Cob

I'd never thought I would have Corn on the Cob in America! I grew up eating Corn on the Cob in the Philippines. So when my husband made this Yummylicious Corn on the Cob, I was like wohooo!!! Feels like I'm having a supper in the Philippines! Great Food!!!

INGREDIENTS

    1/2 cup and 2 tablespoons milk
    4 tablespoons sugar (white)
    2 tablespoons and 1-1/2 teaspoons butter
    3 tablespoons heavy whipping cream
    5 ears corn on the cob (husks and silk removed)


DIRECTIONS

Bring water to a boil in a large stock pot; stir in milk, sugar, cream, and butter until sugar dissolves and butter melts. Gently place ears of corn into the mixture and reduce heat to low. Simmer corn until tender, 7 to 8 minutes. Remove from the liquid with tongs and set aside under aluminum foil until serving time.

Last June 17th my husband surprised me with a birthday dinner. A tasty sweet creamy dressing coleslaw is one of the good stuff he prepared. It was was absolutely delicious, and I'm not even a huge slaw fan!

INGREDIENTS
  • 3/8 (16 ounce) bag coleslaw mix
  • 2-1/4 teaspoons diced onion
  • 1/4 cup creamy salad dressing (such as Miracle Whip™)
  • 1 tablespoon and 1/4 teaspoon vegetable oil
  • 3 tablespoons white sugar
  • 1 teaspoon white vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon poppy seeds
DIRECTIONS

Combine the coleslaw mix and onion in a large bowl.

Whisk together the salad dressing, vegetable oil, sugar, vinegar, salt, and poppy seeds in a medium bowl; blend thoroughly. Pour dressing mixture over coleslaw mix and toss to coat. Chill at least 2 hours before serving.

Home-Made Beef Burger

For tonight's dinner, a magnificent burger made with all the goodness of beef burger barbecue with American Cheese, Sweet onions, Dills Relish... and more...

1 lb ground beef (I used ground sirloin)
¼ garlic salt
½ teaspoon salt
¼ teaspoon black pepper
Ketchup
Dills Relish
Mayo
Tomato
American Cheese

 In a bowl combine the ground beef, garlic salt, salt, and pepper to taste. 
Grill patties, uncovered, over medium-hot heat for 5-7 minutes on each side or until juices run clear. Top each with a cheese slice; grill 1 minute longer or until cheese is melted. Serve on buns with sauce and onion topping.
  


Spread with mayo and dills relish

Add tomato and onion to top part of bun, add cooked burger to bottom part, top with American Cheese and ketchup, stick the lot together.

Peanut Butter Cup Cookies


June 24th, Helena Montana - Our niece and nephew were coming for a visit so my husband decided to make them some delicious homemade treats, the Peanut Butter Cup Cookies. They turned out really good, the peanut butter and chocolate together is just perfect!

   3/4 cup and 2 tablespoons all-purpose flour
    1/4 teaspoon salt
    1/2 teaspoon baking soda
    1/4 cup butter, softened
    1/4 cup white sugar
    1/4 cup peanut butter
    1/4 cup packed brown sugar
    1/2 egg, beaten
    1/2 teaspoon vanilla extract
    1 tablespoon milk
    20 miniatures chocolate covered peanut butter cups, unwrapped

Preheat oven to 375 degrees F or 190 degrees C.

Sift together the flour, salt and baking soda then set aside.

Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. 

Add the flour mixture; mix well. Shape into 40 balls and place each into an un-greased mini muffin pan.

Bake at 375 degrees for about 8 minutes. 

Remove from oven and immediately press a mini peanut butter cup into each ball.

You cannot eat these little peanut butter cookies right away. You have to wait for them to cool completely. If you try to remove the cookies from the pan while they are still warm, the peanut butter cup cookies will fall apart. So resist if you can for a few hours.

Serving: 20

If you like chocolate, if you like peanut butter, if you just like sweets period this peanut butter cookie is for you! The dough is just sooo chewy and perfect and the peanut butter cup just tops it off!!

Home-made: Best Barbecue Sauce


Best Barbecue Sauce

This is exactly the barbecue sauce that we have been looking for; tangy, thick, and sweet; the best home-made barbecue sauce.


    1/2 cup ketchup
    1/2 cup tomato sauce
    1/4 cup and 1 tablespoon brown sugar
    1/4 cup and 1 tablespoon red wine vinegar
    2 tablespoons unsulfured molasses
    1 teaspoon hickory-flavored liquid smoke
    1-1/2 teaspoons butter
    1/8 teaspoon garlic powder
    1/8 teaspoon onion powder
    1/8 teaspoon chili powder
    1/4 teaspoon paprika
    1/8 teaspoon celery seed
    1/8 teaspoon ground cinnamon
    1/8 teaspoon cayenne pepper
    1/4 teaspoon salt
    1/4 teaspoon coarsely ground black pepper

Mix together the ketchup, tomato sauce, wine vinegar, molasses, liquid smoke, brown sugar, and butter in a saucepan over medium heat. Then season with garlic powder, onion powder, chili powder, paprika, celery seed, cinnamon, cayenne, salt and pepper.
Reduce heat to low, and simmer for up to 20 minutes. For thicker barbecue sauce, simmer longer, and for thinner, less time is needed. Sauce can also be thinned using a bit of water if necessary. Brush sauce onto any kind of meat during the last 10 minutes of cooking.
